The holiday season is coming and there are so many wonderful things to see and do. It is hard to decide just which destination will be the most educational, entertaining and fun. I know we can’t afford them all, but wouldn’t it be great if we could. It takes time to get all the contracts in place and this year it is taking more time. Be patient - I will do the best I can as soon as I can. In the meantime, we can dream and plan for a wonderful time to come. Once I have the tours fully planned, I will publish them right here in the Winter Texan Times. All the contracts that I sign with hotels, casinos, charter buses, etc., have due dates. Some require a certain percentage of payment upfront, while others require payments in a designated number of days before the trip. So, I plan accordingly to get bookings ahead of time and cross my fingers that we will have great weather during the tour. Some of the tours that I like the most are usually the slowest to sell. For instance, the farm tour. I often hear the comment from the women that they have had all the farming that they want. Yet they are the very first ones who want to climb up in the navigator seat on the duster planes. Perhaps I enjoy the Farm Tour so much because it brings back so many happy memories of my growing up on a farm. The King Ranch Hand Breakfast is another favorite of mine - especially the presentation of the cutting horses and the camp bread known as pan de campo in Spanish. That bread is cooked in a cast iron Dutch oven over a campfire. Cooking in a Dutch oven over a campfire takes real skill. Have you ever tried it? Watching the cutting horse respond to the cowboys’ instructions is another great experience. The cowboy communicates to the horse which animal is to be separated or cut from the herd. After that the horse takes over. All the rider has to do is to sit tight in the saddle as the horse will make rapid turns as the selected animal attempts to stay with the herd.
